If I have a creature with Pet or Bloodreaper status, can I summon another creature and move that status to that creature? Or do I have to wait until the previous creature leaves the battle field?

How many pets / bloodreapers can you have?

I had asked the same question a while back myself.   Once a pet or reaper is named, the current one has to die before you can reassign another.

That's correct.  You can only have 1 Pet/Bloodreaper out at a time, and you have to wait until they are destroyed before getting the marker back to assign a new one.

If your pet dies, does the health loss stay? Bc it is health pool loss not damage tokens, correct?  So if you use it too much or recklessly it can become quite a detriment, correct?

If by pet, you mean Bloodreaper, then yes.  When you make a creature a Bloodreaper it is a permanent loss of your max health.
So again, yes putting out more than 1 Bloodreaper is generally a bad idea, even if you have lots of heals.
