From what I understand from the rules, a creature dies in the "attack ends" phase during combat.
So if I have a creature on guard that takes enough damage to die in the "attack and damage" phase, it can counterstrike. Is that right?

As soon as a creature has damage equal to their life, then they die.  This is immediate.  They don't linger until the end of the phase.

How would a Defensive Barrier be affected in this deadly senerio?

It wouldn't activate as Defensive Barriers are later in the attack steps (step 6 as opposed to step 4 for Damage and Effects)
