If I deploy a Samara tree from a seedling pod, does the seedling pod used to deploy the tree return to my spellbook via Cantrip??

I think in this case the destruction of the Seedling Pod would take place (when it is targeted) before the Samara Tree is cast and in-play. Therefore the Cantrip trait would not apply in this case.

The seedling pod would not have cantrip. You sacrifice the seedling pod when the spell is cast, but Samara Tree is not in the Arena until the spell resolves.

That was my assumption. But I wasn't sure if cantrip would be given after the fact.
