Title: Afflicted Demon And Poison Immunity

If an Afflicted demon attacks and damages a living creature with poison immunity (such as a necromancer), obviously the poison immune creature doesn't become weak (since it is a poison condition), but is a weak condition marker still removed from the demon?

No. Because of how it is written, you're not removing a weak from the afflicted demon and adding one to the defender, you're moving a weak to the defender from the afflicted demon. Since you can't put a weak on a poison immune defender, you can't move a weak to them, so a weak token is not moved.
