Quicksand and Eagles Wings

Can you reveal Eagles Wings after the Spell Declaration stop to become a non valid target for Quicksand.. effectively gaining flying prior to the resolution of the Quicksand..

   1. Creature targeted by Quicksand during Cast Spell phase.
   2. Reveal Eagles Wings during Counter Spell phase.
   3. Quicksand no longer has a valid target during Resolve phase so creature is not affected.

That is how we played it.. is that correct?.. and if so what happens to Quicksand... mana spent and spell discarded?

I would like to note that you don't reveal enchantments during any phase but rather between phases (except for mandatory reveals which say otherwise). Besides that your tactic is sound. Quicksand would be countered and discarded because it no longer has a valid target. The caster would simply lose mana for no benefit.

Revealing eagle wings after quicksand resolves though would have no effect, as restrained prevents the creature from gaining flying.
