There are of course hundreds of possible creature-enchantment combinations
but there are a number of combinations that stand out imo.
Ask yourself : if you could put just 1 enchantment on a certain creature, what would it be ?
These are the best combinations I've encountered so far :
Cassiel - Divine reversal
Thoughtspore - Glancing Blow
Bridge troll - Rhino Hide
Blood Demon - Demonic Bloodlust
Crusader Griffin - Lions Savagery
Fellella - Brace Yourself
Brogan - Divine Protection
Cervere - Lions Savagery
Eligor Larington - Bear Strength
Gorgon Archer - Hawkeye
Grimson - Hawkeye
Necropian Vampiress - Bear Strength
Adramelech - vampirism
Alandell - Akiro's Favor
Titanodon - Cheetah Speed
Which combinations would you suggest ?

Cassiel - second chane
Dark pact slayer - demonic link
Enemy - rise again :b

Arena:
Thoughtspore - Redirect
Necropian Vampiress - Critical Strike (or Falcon Precision if vs. Defenses)
Thunderrift Falcon - Gator Toughness (or Lion Savagery, esp. if "Pet")
Any Straywood Beastmaster "Pet" of Level 2 or higher - Joined Strength
Any Arraxian Crown Warlock "Blood Reaper" - Demonic Bloodlust AND Demonic Link
Goran, Werewolf Pet - Demonic Bloodlust (and often Vampirism)
Ehren, Enduring Paladin - Regrowth
Knight of the Red Helm - Knight's Courage (probably the most obvious in the game)
Naiya - Harmonize (and Brace Yourself and Glancing Blow... basically if you're going to Harmonize her, you've just made killing/protecting her the focus of the match)
Big enemy creature - Song of Love or Chant of Rage (depends on Mage training)
Armoured enemy creature - Rust
Regenerating enemy creature - Theft of Life
Domination:
Level 1 living creature - Panther Stealth
Tarraki, Thousand Bites - Badger Frenzy (this is borderline broken)
Guardian Angel - Sentinel of V'tar
Enemy living support creature (like a Standard Bearer or Redclaw or Guardian Angel or Wychwood Faerie) - Plagued
Enemy level 1-2 guard - Shrink
Sslak that an enemy is trying to take out - Giant Size
Usslak I'm trying to take out - Rust or Agony or Tangleroot (depends on Mage training)

Gorgon archer is not hawkeye - its eagle wings :)

Petbird: Joined strength + Wolf Fury and a face down giant size.
Long live the bird.

Giant size - gremlin
Demonic lik - firebrand imp (as adramelech warlock)
Retaliate - brute
Adramelechs touch - magma golem
Wolf fury - tegu

It had been said already, but I second Ehren + Regrowth :)
Bear Strength goes with pretty much everything and I have at least 1 in almost every spellbook, So I won't count combinations with it.
Bloodcrag Minotaur + Ballad of courage.

Water Elemental - Ballad Of Courage andor Demonic Bloodlust.

Infernian scourger + sanguine thirst
Light of dawn + Gator toughness
Cervere +lion savagry
Disciple of radience + iguana regrowth.

Not for nothing sharkey but allendel can still potentially swing 6 dice with that agony on. I think id stick Enfeeble on him instead.

If you can include promos, then:
Ehren - Debilitate (basically the Enchantment version of Altar of Infernia)
Cervere - Force Hold
Adramelech - Maim Wings
Guardian Angel - Shrink (or Tanglevine, but it's not an Enchantment)
Naiya - Marked for Death (then Teleport her away from the safety of her Sea)
Domination:
Chant of Rage is so good... really wrecked my Acolyte of the Bog Queen.
