Someone told me that he thought that Eagle Wings could not be revealed in response to a melee attack from a non-flying creature to avoid the attack, but I don't see why it couldn't. I looked in the Rules and Codex and didn't see anything on this there. Also, I don't see anything in the text on the card. Can someone please confirm or deny that this can be done?

You can reveal Eagle Wings, but you cannot use it to dodge an attack because a creature is not allowed to gain or lose flying during an attack sequence. See the section in the rules on flying creatures on page 15 of the Mage Wars rulebook.

I believe the latest time to reveal eagle wings to avoid an attack is just after they move into that creature's zone or just after they activate a creature in that zone.
the enemy creature will still be hindered.
